Grilled Sweet Potato Salad with Balsamic Vinaigrette

Serves:4

4 sweet potatoes, peeled and cut into 1/2" slices
1/2 cup red bell pepper, diced
1/4 cup green onions, sliced
1/4 cup fresh flat leaf parsley, chopped
balsamic vinaigrette
non-stick cooking spray

Spray all sides of sliced potatoes with non-stick cooking spray.
Grill potatoes over medium heat (350°F - 400°F) 5 to 10 minutes, depending on thickness of potato slices. Turn occasionally. Cool slightly and cut into 1" cubes.
Combine potatoes, pepper, green onions and parsley in a large bowl; toss with vinaigrette.

Balsamic Vinaigrette
1/2 cup olive oil
3 tablespoons balsamic vinegar
drizzle over salad
