Lemon Granita

Lemon Granita can be served in wine glasses or for an extra special look hollow
out a lemon and place the granita in the shell of the lemon.
1 1/2 cups of sugar
1 to 2 tablespoons grated lemon zest
2 1/2 cups of water
1 cup of fresh lemon juice
Combine sugar, lemon zest and 1/2 cup water in small saucepan. Bring to
simmering, stirring until sugar is dissolved. remove from heat.
Combine sugar mixture, remaining water and lemon juice in 13 x 9 x 2 inch pan.
Freeze 1 1/2 hours. Stir every 30 minutes to break up crystals until evenly
crystallized (mixture can be frozen in ice-cream maker, according to
manufacturer's instructions).
Spoon into glasses (or lemon shell). Serve with cookies.
