Company Beef Casserole

8 oz sharp cheddar cheese
5 oz elbow macaroni
1 can cream of mushroom OR cream of celery soup
1 lb ground beef
2 C canned tomatoes
1 T ketchup
1 onion finely chopped
salt & pepper to taste
Brown & drain beef, combine with tomatoes, ketchup, onion & salt & pepper -
simmer 30 minutes. Cook macaroni, drain, set aside. Combine macaroni, soup and
beef mixture. spoon into a 9x13 dish and top with Cheese. Bake 45 minutes at 350
degrees.
The recipe actually calls for 1/4 C chopped green pepper - add it with the
onion if you like green pepper. Also you may substitute other cheeses for the
topping.
