Avocado and Bacon Sandwich
6 slices bacon, preferably sliced thick
3 tablespoons mayonnaise
Tabasco or other hot sauce
1/2 teaspoon salt
1 small red onion, minced, optional
2 slices pumpernickel or whole-grain bread
Fry bacon until very crisp. While it is frying, peel avocado and mash with mayonnaise, lime or lemon juice, a few shakes of hot sauce and salt. Stir in onion, if using.
Toast the bread, heap each slice with the avocado mixture, then lay 3 slices of the bacon across each open-faced sandwich. Makes 2 servings, or maybe only 1.
