This is a very pretty, simple, and versatile dish that can be made ahead and baked when guests come down for breakfast.

4 to 5 eggs

Red and green peppers, diced

Fresh basil (or other favorite herbs)

Green onions, finely chopped

Fresh mushrooms, sliced

Salt and pepper to taste

Ham, julienne sliced

Asiago cheese, grated or crumbled

Grease a 9 x 9-inch or similar dish. Break eggs into the dish and add salt and pepper to taste. Cover with desired vegetables, ham, and herbs. Top with Asiago cheese. Bake at 400 degrees for approximately 20 minutes. Serve with muffins and fresh fruit.
