Pineapple Refrigerator Relish

2 cups finely chopped fresh pineapple
3 tablespoons chopped fresh cilantro
3 tablespoons minced sweet red pepper
2 tablespoons finely chopped purple onion
2 tablespoons sugar
2 tablespoon vinegar
1/2 teaspoon grated lime rind
1/8 teaspoon salt

Combine pineapple, cilantro, red pepper, and purple onion in a glass bowl, tossing well. Combine sugar, vinegar, lime rind and salt; stir well. Pour over pineapple mixture. Cover and chill 2 hours.

Serve relish with grilled chicken or pork, using a slotted spoon. Store relish in refrigerator.
