20 Minute Sausage & Vegetable Soup
It's amazing that something this quick and easy can taste so comforting. I found this recipe in a great little checkout stand recipe booklet, Dinner on the Double, by Better Homes and Gardens.
14 1/2 oz can beef broth
14 1/2 oz can Italian stewed tomatoes
1 1/2 cups water
2 cups frozen hash brown potatoes
10 oz frozen mixed vegetables
8 oz smoked sausage, sliced
1/8 tsp pepper
2 Tbsp grated Parmesan cheese
Combine beef broth, undrained stewed tomatoes and water in a large saucepan. Bring to a boil. Stir in hash brown potatoes, mixed vegetables, sausage and pepper. Return to boiling, reduce heat and simmer, covered, for 5 - 10 minutes. Ladle into soup bowls and sprinkle with parmesan cheese.
Yield: 4 servings.
