Cheese Blintzes

6 oz cream cheese
1 12oz carton cottage cheese
1 egg, beaten
2 tb sugar
1 tsp lemon rind
12 6" basic Crepes
3 tb butter

Combine cheese together; beat until smooth. Stir in the next 3 ingredients; chill 15 to 20 minutes.

Spoon about 3 tbsp of filling in center of each crepe. Fold right and left sides over filling; then fold bottom and top over filling, sealing the filling in to make a square.

Melt 2 tbsp butter in a skillet. Place half of the Blintzes, seam side down and cook over medium heat till golden brown: turning once. Remove from skillet and keep warm. Repeat with the rest.
