Souvlaki
Serves 2
1/2 lb lamb, cut into 1-1/2" cubes*
1/4 cup fresh lemon juice
2 tsp olive oil
2 tsp dried oregano
2 cloves garlic, crushed
1 med. green pepper
small onion, quartered
2 kebab skewers
Preheat broiler. Cut as much fat from the lamb. Mix lemon juice, oil, oregano & garlic together. Add lamb & marinate 2 hours or
overnight**. Wash & seed green pepper: cut into 2" cubes. Remove lamb from marinade & thread onto skewers alternating with green pepper & onion. If using the broiler: line a baking tray with foil & place kebabs on tray. Broil 5 minutes, turn & cook 5 minutes more. Serve with a Greek salad & a rice dish. Tzaziki sauce or sour cream on the side.
* I replace the lamb with a pork shoulder butt, chicken or sirloin beef tips. I also cook these on the
barbeque, turning & basting with the marinade.
** If you marinate overnight, boil the juices before using them to baste. Any leftover juice after basting, serve on the side.
Tzaziki Sauce
2 cups plain yogurt
1/2 English cucumber, peeled & grated
2 cloves garlic, crushed
3 tbsp olive oil
1 tsp salt
Mix all together & refrigerate till using, about 1 hour before.
