A Honey of a Chili

1-15oz pkg tofu
1 tbsp vegetable oil
1 cup chopped onion
3/4 cup chopped green bell pepper
2 cloves garlic, chopped
2 tbsp ground cumin
1 tsp salt
1/2 tsp oregano
1/2 tsp crushed red pepper flakes
1-28oz can diced tomatoes, undrained
1-15oz can red kidney beans, undrained
1-8oz can tomatoe sauce
1/4 cup honey
2 tbsp red wine vinegar
Shred tofu with a cheese grater & freeze. Thaw & press out excess
liquid in a strainer. Cook onion, pepper & garlic 3-5 minutes over
medium heat. Stir in remaining ingredients including tofu. Bring to
a boil then simmer 15-20 minutes.
