Rotini with Tuna and Tomato

Serves 6

8 oz. Rotini, Twists or Spirals, uncooked 
1 6 1/8-oz. can solid white tuna, packed in water, drained 
1 medium zucchini, diced 
1 green bell pepper, ribs and seeds removed, diced 
1 medium tomato, peeled, seeded and chopped 
3 scallions, sliced 
1/4 cup drained capers (optional) 
2 tbsp. vegetable or olive oil 
2 tbsp. lemon juice 
1 tsp. minced fresh basil 
2 tbsp. minced fresh parsley 
Freshly ground pepper to taste 

Cook pasta according to package directions; drain and chill. Combine pasta, tuna, zucchini, bell pepper, tomato, scallions and capers and toss. Mix remaining ingredients and pour over the pasta mixture. Toss lightly and serve.
