Ham & Apricot Salad

Sweet, plump dried apricots make a sensational addition to this light salad. 

 

5 ounces (2 cups) uncooked dried radiatore (pasta nuggets) 
3/4 cup low-fat mayonnaise 
1/2 cup chopped celery 
1/2 cup dried apricots, cut into fourths 
1/4 cup sliced green onions 
1/2 pound slice (1/2-inch thick) deli Alpine LaceŽ Fat Free Honey Ham or Cooked Ham, cubed 1/2-inch 
1/2 pound slice (3/4-inch thick) deli Alpine LaceŽ Reduced Fat Swiss Cheese, cubed 1/2-inch 
1/4 teaspoon coarsely ground pepper 

Cook radiatore according to package directions. Rinse with cold water. Drain. 

Meanwhile, combine all remaining ingredients in large bowl. Add cooked radiatore; toss to coat well. Cover; refrigerate at least 1 hour. 
Makes 6 (1 cup) servings.
