Muffins That Taste Like Doughnuts

1 3/4 c. flour
1/2 tsp. salt
1/4 tsp. cinnamon
3/4 c. white sugar
3/4 c. milk
1 1/2 tsp. baking powder
1/2 tsp. nutmeg
1/3 c. oil
1 egg
Combine flour, baking powder, salt, nutmeg & cinnamon. In separate bowl, combine
oil, sugar, egg & milk thoroughly. Add liquid ingredients to dry ingredients and
stir only to combine. Drop muffin batter into greased muffin tins. Bake at 350°
- 15-20 minutes.
Once muffins have cooked, dip tops of muffins in some melted butter or margarine
and then into a white sugar & cinnamon mixture. (approx 3/4 c. white sugar mixed
with 1 tsp cinnamon)
Note: Instead of dipping them in the butter & sugar combination, you can
sprinkle muffins with a streusel topping before baking
Streusel Topping
1/4 cup sugar
2 tblsp flour
1 tblsp butter or margarine
Mix all together till crumbly like a cornmeal texture. Then sprinkle over muffin
batter.
For a delicious variation, fill tins 1/2 full of batter, put 1 t jam on
top, and top with the rest of
the batter.
