Banana Split Muffins

1-1/2 C. all-purpose flour
1 C. sugar
½ C. mini semisweet chocolate chips
1 t. baking soda
1 t. salt
3 medium ripe bananas, mashed
½ C. mayonnaise (not light or fat-free)
1/3 C. chopped maraschino cherries
12 maraschino cherry halves

In a large bowl, combine dry ingredients. In another bowl, combine bananas & mayonnaise. Stir into the dry ingredients just until moistened. Fold in the chocolate chips & chopped cherries. Fill greased or paper-lined muffin cups ¾ full. Bake at 375º for 20-25 minutes or until muffins test done. Press a cherry half, cut side down, into the top of each muffin. Cool for 5 minutes in pan before removing to a wire rack. Yield: 1 dozen.
