Fiesta Skillet Dinner

This quick weeknight skillet meal will be a favorite.

1 pound lean ground beef
1 cup uncooked instant rice
2 (14 1/2-ounce) cans chunky tomatoes with pepper and onions*
1/2 cup water
4 ounces (1 cup) LAND O LAKESŪ Cheddar Cheese, cubed 1/2-inch
1 cup tortilla chips
Cook ground beef over medium-high heat in 10-inch skillet, stirring
occasionally, until browned (5 to 8 minutes); drain. Stir in rice, tomatoes and
water. Cook until mixture comes to a boil. Reduce heat to low. Cover; cook,
stirring occasionally, until rice is tender (5 to 6 minutes).
Stir in cheese; sprinkle with tortilla chips.
* Substitute 2 (14 1/2-ounce) cans any variety chunky tomatoes with seasonings.
