Coddled Bacon and Eggs Florentine

4 teaspoons salted butter
1/4 cup cooked chopped spinach
4 tablespoons real bacon bits
4 large eggs
4 tablespoons grated Parmesan cheese
4 tablespoons half and half cream
Preheat oven to 350 F degrees.
Spread butter over surfaces of individual casserole dishes. Scatter spinach and
bacon bits evenly over the bottom of each dish. Sprinkle one teaspoon of cheese
over each dish.
Break one egg into each dish. Cover each egg with a tablespoon of cream. Divide
remaining cheese over all. Bake until eggs are set, 8 to 10 minutes.
Makes 4 (1-egg) servings.
