Thai Fish Cakes with Green BeansTod Man Pla

450g Cod Fillets
1 Egg
1 tbsp Thai Fish Sauce
1 tbsp Thai Red Curry Paste
1 tbsp Kaffir Lime Leaves
1 tsp Palm Sugar (or white sugar)
½ tsp salt
40g French Beans
1 tbsp Light Soy Sauce
150ml Cooking Oil

To prepare skin the cod fillets and cut into chunks. Chop the kaffir lime leaves very finely and thinly slice the French beans into rounds.

Put the fish in a food processor with the fish sauce and curry paste, light soy sauce, kaffir lime leaves, egg, sugar & salt. Process until smooth, then stir in the sliced green beans.

Divide the mixture into 16 pieces. Roll each one into a ball and then flatten into a 6cm (2 ½ ") round.

Heat the oil in a large frying pan and fry the fish cakes in batches for 1 minute on each side until golden brown. Lift out and drain on kitchen paper.

Serve with sweet chilli sauce.
