Stewed Apple Compote for Jerk Pork

1/2 lb smoked bacon chopped
1 medium onion sliced
6 green apples cored and sliced
1/2 cup sugar
1/2 cup cider vinegar
2 tbs fresh rosemary shopped
salt and pepper to taste

In a medium pot, render the bacon with the onions over medium heat until the bacon is crisp and onions and translucent

Stir in the apples, sugar and vinegar

Simmer, stirring occasionally until the mixture becomes light brown. This means the sugar has started to caramelize

Season with the rosemary, salt and pepper
