Cornish Squares

Ingredients.
1 ounce butter or margarine
1 medium onion, peeled and chopped.
1 pound beef mince steak
½ pound sausage meat
2 level tablespoons plain flour
2 level teaspoons curry powder
1 beef stock cube (or powder)
1 cup water
1 tablespoon tomato sauce
salt and pepper to taste
1 cup grated carrot
1 cup grated apple
10 ounces short crust pastry
3 tablespoons grated cheese
Method.
Melt the butter in a saucepan and cook onion until it is soft but not brown. Add
the meats and cook until changed colour. Blend in flour and curry powder.
Dissolve the beef stock in water and add to meat mixture with tomato sauce, salt
and pepper. Stir until boiling. Cover and simmer 30 minutes.
Remove from heat and cool. Fold in carrot and apple and adjust seasonings.
Roll 2/3 pastry and line a greased 11 x 7 inch shallow tray. Roll the remaining
pastry and cover the top.
Glaze with a little milk and sprinkle cheese on top.
Bake at 425 F for 10 minutes and then reduce heat to 350 F and bake for 30
minutes.
Cut into squares for serving.
