Boiled Chocolate Cake

Boil together:
1 1/2 cups of water
5 tablespoons cocoa
6oz. butter
Pour slightly cooled chocolate mix over:
3 cups of plain flour
2
1/4 cups of sugar
Add: 1 1/2 tablespoons lemon juice
2 1/4 teas. bicarb. soda
3 beaten eggs
3/4 cup of milk
vanilla
Mix all together. Makes 2 deep 8 inch round cakes. Bake 50-55 minutes (till
firm) at 350 (180C)
Rich Chocolate icing. melt 2 ounces butter, 1/2 cup brown sugar. Stir over
medium heat for 2 minutes but do not boil. Add 2 tablespoons milk, stir to boil,
remove from heat. Blend in 1 1/2 cups icing sugar and 1 tablespoon cocoa sifted,
vanilla. Add a little extra milk is stiff. Quickly spread over cold cake. (sets
very fast) (Omit cocoa, makes nice caramel icing for a plain cake.)
