Maple Syrup Doughnuts

1 cup maple syrup
1 tablespoon solid vegetable shortening
2 large eggs
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2/3 cup buttermilk
vegetable oil for frying
Beat syrup and shortening in large mixer bowl until blended. Beat in eggs until
smoooth. Sift flour, baking powder, baking soda, salt and nutmeg into medium
bowl. Add flour mixture, 1/3 at a time, to syrup mixture, alternating with
buttermilk, mixing well after each addition. Refrigerate dough, covered, 1 hour.
Heat 2 inches oil in Dutch oven to 375 F. Roll out dough on lightly floured
surface to 1/2-inch thickness. Cut out dough with doughnut cutter. Fry 3 or 4
doughnuts at a time in oil, turning once, until golden brown and cooked through,
about 2-1/2 minutes per side. Drain on wire racks lined with paper towelings.
