"Skampe na buzaru"
(Shrimp Buzara Style)
Don't be afraid of the amount of garlic and onion suggest in this
recipe,
it's not a
mistake plus it's good for your health
As the Croats would say "zivjeli", or "to life!" Serve with lemon
slices,
salad and
fresh, crusty bread for dipping into the Buzara sauce.
Serves 10
3/4 cup olive or cooking oil
1 cup minced onion
3/4 cup chopped garlic
4 1/2 pounds shrimp, peeled and deveined
2 tablespoons cognac
3 to 4 tablespoons bread crumbs
juice of 1/2 a lemon
2 cups white wine
2 pounds fresh tomatoes, peeled and diced
salt and pepper to taste
1 lemon, sliced
1/2 cup chopped parsley
1/2 lemon sliced
Heat the oil in an ovenproof dish on the stovetop over medium heat (
a metal roaster will do). Add the onion and garlic and brown. Add
the shrimp. Fry for a bit, then add the cognac and sprinkle in the
bread crumbs.Preheat oven to 325 degrees. Pour in the lemon juice
and all the wine over the shrimp. Add the tomatoes and salt and
pepper. Cover and bake for about 30 minutes. Garnish with lemon
slices and parsley.
