Pohane Tikvice
(Fried Courgettes)

This dish can be served as a starter or as an accompaniment to roast
meat.
4 courgettes, medium size
salt and ground black pepper
2 eggs
4tbsp flour
parsley, chopped
sunflower oil, for shallow frying
grated cheese and salad, to serve
Peel and grate the courgettes, put them in a colander, sprinkle with
salt and leave for 30 minutes to 1 hour.Drain and remove excess
moisture by squeezing them with your hands.Put the courgettes, eggs,
flour, parsley, salt and ground black pepper in a medium bowl. Mix
well.Place spoonfuls of mixture into hot shallow oil and flatten
each one with a spoon.Cook for 4-5 minutes until golden brown on
both sides. Put each cooked slice on kitchen paper to absorb the
excess oil.Place on a serving dish with salad, and sprinkle with
grated cheese.
