Applebee's Tequila Lime Chicken

Notes: If you can not find thin strips of corn tortilla strips try slicing fresh
corn tortillas into 1/4" wide strips. Place corn tortillas in hot vegetable oil
and fry until crisp, remove from oil and drain, salt lightly.
4 Boneless, Skinless Chicken Breast (1/2" thick)
1/2 C. Roses Sweetened Lime Juice
Salt and Pepper (to taste)
Southwestern Sauce
8 oz Shredded Colby/Monterey Jack Cheese
Thin Strip Crisp Tortilla Shells
Pico de gallo
Southwestern Sauce
Place chicken breast in a shallow dish and pour Roses lime juice over chicken
pieces. Cover with plastic wrap and let chicken marinate for 8-10 hours. When
chicken is ready to cook season with salt and pepper. Chicken breast may be
cooked on a grilling machine or may be braised in a hot fry pan with a little
non stick spray added to pan . When chicken has been cooked place on a bed of
crisp slender corn chips. Spoon Southwestern Sauce on top of chicken breast and
sprinkle shredded cheese liberally on top. Place under the broiler in your oven
to melt cheese or pop into your micro wave just to melt the cheeses.
Serve with Pico de gallo.
