Cheesy Bean Soup

1 tablespoon vegetable oil 
1 medium (1/2 cup) onion, chopped 
2 teaspoons finely chopped fresh garlic 
2 (14 1/2-ounce) cans reduced sodium chicken broth 
1 tablespoon chili powder 
1 cup instant potato flakes 
2 (15 1/2-ounce) cans great Northern beans, rinsed, drained* 
1/2 pound sliced Alpine LaceŽ Deli Reduced Fat American Cheese, quartered 
1/2 pound slice (1/2-inch thick) Alpine LaceŽ Deli 97% Fat Free Honey Ham or Cooked Ham, cubed 
Sliced green onions, if desired 

Heat oil in 3-quart saucepan; add onion and garlic. Cook over medium heat, stirring occasionally, until onion is softened (3 to 4 minutes). Add chicken broth and chili powder. Continue cooking until mixture comes to a boil (6 to 8 minutes). 

Add potato flakes, beans, cheese and ham. Continue cooking until cheese is melted (6 to 8 minutes). Garnish with green onions, if desired. 

Substitutions: 
*Substitute 2 (14 1/2 to 15 1/2-ounce) cans your favorite beans.
