Meat Loaf with Almonds

1½ cups chopped onions

1 tablespoon butter

2 cups breadcrumbs

½ cup light cream

3 pounds ground round

2 eggs

1 tablespoon curry

1 tablespoon salt

2 tablespoons apricot jam

2 tablespoons lemon juice

¼ cup ground almonds

3 bay leaves

 

Preheat oven to 350 degrees F. Sauté onion in butter until translucent. Soak crumbs in cream.

Combine meat, egg, onion, curry, salt, jam, lemon juice, almonds, and soaked crumbs and mix

well. Place bay leaves on bottom of buttered 10-inch shallow casserole. Place meat mixture on

top. Bake 1 hour. Drain moisture. Serve with lemon slices as garnish.
